DENAZYME PLA2 is a pure, microbial phospholipase A2 with functionality for phospholipid hydrolysis. It can be used in a variety of applications, including for emulsions (sauces and dressings), baked goods (cakes and breads), and hydrolyzed lecithin production (soybean, sunflower, or rapeseed). DENAZYME PLA2 is a Kosher and Halal certified alternative to phospholipase A2 derived from porcine pancreas.  It is produced via fermentation from Streptomyces sp.
