Nagase to highlight ingredient solutions for flavor masking and raw material sustainability at IFT15
New York, NY – July 9, 2015 – Nagase will serve a high-protein beverage and dried pineapple snack prototypes at IFT15, highlighting the multi-functionality of TREHA® trehalose in diverse applications. Trehalose is a unique ingredient with benefits for freshness, flavor, and texture in food and beverages. Nagase will be at booth number #2336 at IFT15, held in Chicago from July 11-14, 2015. TREHA® trehalose is distributed exclusively by Cargill in North America and Europe for food, beverage, and supplements.
Protein Plus+ Beverage: With 20 grams of protein per serving, this ready-to-drink beverage also contains soluble fiber, 25% DV of vitamins and minerals, and is sweetened only with stevia. The optimized formula features TREHA® trehalose for its benefits in masking off-flavors and odors, while also retaining flavor quality during storage. The beverage has a smooth, creamy mouthfeel, limited viscosity, and natural vanilla notes.
Tropical Pineapple Bites: Produced from pineapple cores, these dried fruit snacks are a great-tasting example of pineapple by-product utilization. Pineapple by-products (core, peel, stem, and crown) account for 29 – 40% of the total pineapple weight and are often discarded after fruit processing. TREHA® trehalose gives these snacks enhanced flavor and texture, along with color retention.
“TREHA® trehalose is a high performance ingredient providing high value in broad applications,” said Sharrann Simmons, senior business manager at Nagase America. “With benefits for freshness, texture, and flavor, trehalose can provide an edge in not only beverage and fruit processing applications but also bakery, meat, and frozen foods.”
Delivering over 180 years of Japanese quality, Nagase manufactures a variety of functional ingredients for food and beverages, including Pullulan, Sunmalt®-S maltose, and specialty enzymes. TREHA® trehalose is manufactured through a proprietary enzymatic process.
